Without Edmx you can use Ado.net to update,insert,delete data

Its a tool which creates the relationship with Database.
Alternately, We can goahead/connect with ADO.Net concept too.
Ofcourse Ado.Net is faster to access than Edmx(Entity faramework).

But, Based on the project type and its duration, The architects choose the Entity framework or Ado.Net in their project.
