Converting image (.jpg) data into excel format

It seems that you want to extract the text from the image and save the text as excel format, if that is the case, you need to use OCR toolkit to recognize the text from the image first and then save the result as excel.
You can do that that with few lines of code using LEADTOOLS, similar to this:
